What is coffee roasting?

Coffee roasting is the step that transforms green beans into brown, aromatic beans ready to be ground. Under the effect of heat, their color, structure, and taste profile gradually evolve.

This process is therefore not simply about "cooking" the coffee. The roaster adjusts the temperature increase and development to achieve a balance between liveliness, sweetness, intensity, and roasted notes.

The result also depends on the coffee used. Botanical variety, origin, altitude, terroir, and cultivation method already shape the aromatic potential of the bean before it enters the roaster.

What are the stages of roasting?

Roasting takes place in several phases. They follow each other without a sharp break: the bean gradually changes as it absorbs then releases energy.

Selecting green coffee

It all starts before the roaster is turned on. The quality of the green coffee and its characteristics determine the possibilities offered during roasting.

Drying and temperature increase

The roaster is first preheated. Once the beans are introduced, they begin to lose their moisture and gradually change from green to yellow.

The temperature then continues to rise. Chemical reactions responsible for a large part of the color and aromas begin to gain importance.

The first crack

As it heats, the bean expands. The internal pressure increases until it produces an audible crack called the "first crack."

This marker is important for the roaster. It signifies the entry into a development phase during which the aromatic profile continues to transform.

Coffee development

After the first crack, the roaster chooses how much further to continue roasting. The duration and intensity of this phase directly influence the result in the cup.

A roast stopped relatively early will generally retain more liveliness. By continuing development, roasted notes become more prominent and bitterness may increase.

The second crack

During a deeper roast, a second crack may appear. The bean then becomes darker, and the flavors associated with roasting become more pronounced.

On darker profiles, oils may also become visible on the bean's surface.

Cooling

Once the desired roasting level is reached, the beans must be rapidly cooled to slow down the reactions caused by heat.

How does roasting influence taste?

More than just an opposition between "light" and "strong" coffee, the roasting level modifies the balance between the inherent characteristics of the bean and those created during roasting.

Light roast

A light roast tends to retain more liveliness and allow the fruity or floral notes present in the coffee to express themselves.

Acidity may be more perceptible, and flavors directly linked to the bean's origin generally remain more discernible.

Medium roast

Medium roasting seeks a greater balance between liveliness, sweetness, and notes resulting from the roasting process.

Aromatic families reminiscent of caramel, dried fruits, nuts, or chocolate can be found, depending on the coffee used and the chosen roasting profile.

Dark roast

As roasting progresses, roasted notes become more prominent. The coffee can develop more bitterness and sensations evoking dark chocolate, spices, or smokiness.

Acidity generally becomes more discreet.

Very dark roast

Very dark roasts further accentuate the flavors linked to roasting. Smoky or intensely roasted notes can then dominate the bean's initial profile.

Therefore, there is no universally "best" roasting level. The right profile depends on the coffee, the brewing method, and most importantly, what you enjoy in your cup.

What role does the Maillard reaction play?

The Maillard reaction is one of the major phenomena in roasting. Under the effect of heat, certain sugars and compounds containing amino acids react and give rise to numerous aromatic compounds.

It contributes to the browning of the bean and the appearance of many notes associated with roasted coffee: toasted bread, dried fruits, caramel, or chocolate.

However, it does not act alone. Other thermal transformations occur during roasting and also contribute to the development of taste and aroma.

This is why simply increasing the temperature does not mean obtaining "more aromas." An overly advanced roast can, on the contrary, mask certain characteristics inherent in green coffee.
